Project |01 Master's Thesis

The My Painted Plate Project was conducted at 5 summer day-camps in the Knoxville area with children ages 8-12. Campers received 6 nutrition and art lessons centered around MyPlate. The project was carried out with the help of 21 student volunteers recruited, trained, and supervised by the lead researcher, Abby Forman. The study looked at outcomes including nutrition knowledge, attitudes, and behavior change. Findings are currently in review for journal publication.
Project |02 Block Field - eNRG Performance with Bob Seebohar

This is a 7-week experience and the culmination of the dietetic internship. The MS dietetic intern completes a needs assessment for their assigned community and identifies nutritional gaps in programs or services. They then create a program/project to address one or more of these gaps, implement, and assess the project. The outcomes are then presented to the faculty and graduate students.

Handouts, fliers, and posters were created at a variety of DI rotation sites covering topics from food demineralization for renal patients to post-breast cancer treatment nutrition.
